Kärleksmums/Mockarutor....

Ett litet recept på en familjär kaka....kärt barn har många namn. :)



This is a recipe for a familiar cake that pretty much everyone in Sweden has tasted at least once in their life.
The bottom is a spongecake base and then icing ontop.

Here is the recipe in English for those who want to try them:

Ingredients for cake:
2 eggs
1 1/4 cup sugar
1/2 cup milk and 2 tablespoons
1 2/3 cup flour
2 teaspoons bakingpowder
2 teaspoons vanillasugar (you could use vanilla extract too.)
2 tablespoons cocoapowder
150 gram butter ( or 5.29 oz)

Ingredients for icing:
4 tablespoons butter melted
250gram icing sugar (almost 9 oz)
3 tablespoons water /or cold strong coffea
(for coffea flavor add 2 tablespoons cocoapowder aswell.)
2 teaspoons vanillasugar or extract

Oven: 430 degree F (this may vary between ovens so the oven time may be different.

Instructions:
Mix eggs and sugar well, fluffy and nearly white in color.
Add the milk and blend some more.

Melt the butter

In a different bowl mix all the dry ingredients and add that to the egg mixture.
Stir the two to combine and add the melted butter

Blend well and then line a 12x15" cakepan with parchmentpaper.
(bigger pan=thinner cake=shorter cooktime)

Pour in the batter into the lined pan and bake in the middle of the oven for 10-15 min.

While the cake is baking mix the ingredients for the icing

When cake is done let it rest for 2-5 min and then spread the icing ontop while the cake is still in the pan.
When the icing is still "wet" sprinkle on coconut flakes or sugarsprinkles.

Cut the cake in squares when the icing has set and harden.
